Is everyone feeling energized this Monday morning? I was hoping to come back today and be able to rant and rave about how I won the lottery but I guess that didn’t happen. Since I was feeling pretty down that all of my millionaire dreams weren’t going to come true, and the fact that it’s Monday morning, I’m dragging just a little bit. And if you’re like me, you may want to try out this delicious and energizing Beet Berry Smoothie!
Yes. Beets. As a kid I remember that my grandma would serve beets at her house and I actually loved them. I haven’t touched beets in a really long time. Seriously though, try not to actually touch beets because you’ll end up with pink hands for days. And since I’m in a mode of ‘trying new things’ (aka my New Year’s Resolution) I thought I would resurrect my love for beets. In a smoothie.
This smoothie is packed with all sorts of nutrients. The frozen mixed berries that you’ll use provide you with awesome antioxidants. The beets are high in vitamin C and fiber. The chia seeds are packed with Omega-3 fatty acids. And the Almond Breeze Almondmilk is a great source of protein and adds a nice creamy texture to the smoothie.
If getting healthy and drinking more beets was a part of your New Year’s resolution I suggest giving the Beet Berry Smoothie a try. If you want something a little sweeter you can add a little more honey into the blender or try Almond Breeze Original, which is slightly sweetened.

- ¾ cup Almond Breeze Almondmilk
- ¾ cup frozen mixed berries
- ¼ cup grated beet
- ¼ cup mint leaves
- 2 tablespoons fresh lime juice
- 1 tablespoon ground chia seeds
- 1 tablespoon honey
- Using the smoothie or ice crush setting on your blender, purée Almond Breeze Almondmilk, berries, beet, mint, lime juice, chia seeds, honey and ½ cup ice in a blender until smooth.
- Serve immediately.
